Paneer Tikka

Marinated paneer cubes grilled with spices, often served as an appetizer.

Ingredients:

  • Paneer Marinade:

    • Paneer (Indian cottage cheese), 250 grams, cut into cubes

    • Yogurt, 1 cup, thick

    • Gram flour (besan), 2 tablespoons, lightly roasted

    • Ginger-garlic paste, 1 tablespoon

    • Lemon juice, 1 tablespoon

    • Turmeric powder, 1/2 teaspoon

    • Red chili powder, 1 teaspoon

    • Garam masala, 1 teaspoon

    • Cumin powder, 1 teaspoon

    • Coriander powder, 1 teaspoon

    • Chaat masala, 1 teaspoon

    • Kasuri methi (dried fenugreek leaves), 1 teaspoon, crushed

    • Salt to taste

    • Oil, 2 tablespoons

  • Vegetables (optional):

    • Bell peppers, 1-2, cut into squares

    • Onion, 1 large, cut into squares

Instructions:

  1. Prepare the Marinade:

    • In a mixing bowl, whisk together yogurt, roasted gram flour, ginger-garlic paste, lemon juice, turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, chaat masala, kasuri methi, salt, and oil.

    • Add the paneer cubes to the marinade, coating them well. Optionally, add squares of bell peppers and onions for a colorful variety.

    • Cover the bowl and let it marinate in the refrigerator for at least 1 hour.

  2. Grill the Tikka:

    • Preheat a grill or oven to 400°F (200°C).

    • Skewer the marinated paneer cubes, alternating with vegetables if using.

    • Place the skewers on the grill or in the oven and cook for 15-20 minutes, turning once, until the edges are slightly charred.

  3. Serving:

    • Remove from the skewers and serve hot with mint chutney, lemon wedges, and a sprinkle of chaat masala.
