Paneer Tikka
Marinated paneer cubes grilled with spices, often served as an appetizer.
Ingredients:
Paneer Marinade:
Paneer (Indian cottage cheese), 250 grams, cut into cubes
Yogurt, 1 cup, thick
Gram flour (besan), 2 tablespoons, lightly roasted
Ginger-garlic paste, 1 tablespoon
Lemon juice, 1 tablespoon
Turmeric powder, 1/2 teaspoon
Red chili powder, 1 teaspoon
Garam masala, 1 teaspoon
Cumin powder, 1 teaspoon
Coriander powder, 1 teaspoon
Chaat masala, 1 teaspoon
Kasuri methi (dried fenugreek leaves), 1 teaspoon, crushed
Salt to taste
Oil, 2 tablespoons
Vegetables (optional):
Bell peppers, 1-2, cut into squares
Onion, 1 large, cut into squares
Instructions:
Prepare the Marinade:
In a mixing bowl, whisk together yogurt, roasted gram flour, ginger-garlic paste, lemon juice, turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, chaat masala, kasuri methi, salt, and oil.
Add the paneer cubes to the marinade, coating them well. Optionally, add squares of bell peppers and onions for a colorful variety.
Cover the bowl and let it marinate in the refrigerator for at least 1 hour.
Grill the Tikka:
Preheat a grill or oven to 400°F (200°C).
Skewer the marinated paneer cubes, alternating with vegetables if using.
Place the skewers on the grill or in the oven and cook for 15-20 minutes, turning once, until the edges are slightly charred.
Serving:
Remove from the skewers and serve hot with mint chutney, lemon wedges, and a sprinkle of chaat masala.
